PaceWe have some pretty crazy days where we've already lots of harvesting to do for standing orders and then someone will call in and ask for three pounds of basil or a pound of thyme.
So we have to stop, fill their order and then continue on. We generally cut for the next day and some days are slower than others but Thursdays, Fridays and Mondays in particular can get very hectic.
